Potatoes are not hard to grow, when I was a kid on the farm all we did was cut up the potatoes in small hunks and plant them in the soft soil, about three inches deep. That was all there was to it, you can dig them up at all stages of growth.
Nevertheless, it is recommended that you buy seed potatoes, you can get them from a nursery. In addition, plant them about an inch deep, and approximately 2 feet apart but you can be creative about it they are a hardy plant. Do not over water them. Loose soil that retains water, at the same time well drained. .Recommend that you plant in the spring.
Would suggest using seed carrots and plant them about one-quarter inch deep and about a foot apart. Carrots do well in loose soil well drained, as they do not do well generally in heavy soils. You take can them when they reach finger size and you certainly do not have to dig them up all at once, they will keep until you want them.
Carrots do require larger amounts of moisture but again do not overwater them. Hot weather for a long period can slow growth and the taste, well you might not like. They seem to thrive at around 65 degrees F.The variety of carrots depends on the type of soil. Some carrots are better suited for heavy soil than others are like Red-Cored Chantenay and Short and Sweet.
