I have to say that my mother is the best apple pie maker in the world. You may not think so and maybe I am biased, but you would be too, if she were your mother. First she peels and cores the apples. Then she cuts them up into the pan so she can measure how many she needs.
Then she adds the spices.
Next, she measures out the flour and shortening and cuts the shortening into the flour. She does this by hand with a fork; because that is the way she has always done it. Forget that there are pastry cutters and machines that can do this, she is more comfortable with the old fashion way.
After she adds the water, she kneads the dough with her fingers until it is smooth.
Then she rolls it out.
Then she folds it in half and places it in the pan.
After putting in the apples and dotting the top with butter, she puts on the top crust and trims the edges with a knife.
Then she pinches the edges to seal it
After baking it and letting it cool…she serves it with a smile!
