Parsley is a herb that helps with digestion, bloating and overall good health. Parsley has been used in medicine for thousands of years, try some of these simple recipes and reap the rewards for your self.
Garlic potatoes with parsley
- 5-6 med white potatoes cubed
- 3 cloves garlic crushed
- 1 small minced onion
- ½ cup finely chopped fresh parsley
- 1 cup of water
- 3 tbsp of butter/ margarine or olive oil
In large frying pan add one tbsp of butter/ Marg. Or Oil, when heated add potatoes and onion fry for a 2-3 minutes on med-high heat. Turn heat to med-low add in slowly 1 cup of water, cook until water evaporates, if potatoes are still not cooked all the way through add a bit more water. When potatoes are cooked add in parsley, crushed garlic and last 2 tbsp of butter, Marg. or oil to slightly crisp potatoes and briefly cook parsley and garlic about 3- 5 minutes. To have a more crispy potatoes add in 2 more table spoons of Butter or oil and cook an extra 5 minutes.
Serves 4-6, goes great with crispy chicken or glazed pork chops…Yum-mee
Herb Omelette
- 4 eggs
- 2 tbsp milk, cream or water
- 1 tbsp chopped parsley
- 1 tbsp chopped chives
- Salt and pepper
- 2 tbsp butter
- 1/3 cup gruyere cheese
Beat eggs in bowl until frothy, add in 2 tbsp of liquid, add in herbs season with salt and pepper, and briefly mix. In hot skillet heat butter till frothy, swirl to coat the bottom of the pan, pour in egg mixture. Let egg settle, allow half the omelette to cook before adding cheese, you can fold in half continuing to flip until cooked or grill in the oven until egg and cheese are done, note* if using the oven remove pan with caution handle will be hot*
Tomato pasta sauce with Herbs
- 28 fl oz can of crushed tomatoes
- 1 small can tomato paste
- 2 tbsp olive oil
- 4 cloves garlic diced
- 1 cup chopped herbs, parsley, basil and coriander
- ½ cup chopped onions
- Salt and pepper
- 1/3 cup shredded parmesan cheese
- Cooked pasta
In large skillet heat oil on med heat, add onions and garlic cook till onions slightly clear. Turn heat down to med-low slowly add in crashed tomatoes, tomato paste, and herbs, stir. Simmer for 30 minutes stirring frequently; add cheese during the last 5 minutes of cooking. Serve over you favourite pasta…Yum-mee
Parsley spread and Dip
- 1 cup sour cream
- 1 cup soft cream cheese
- ½ cup mayonnaise
- 1 cup finely chopped parsley
- ¼ cup grated onion (1 sml. onion)( Optional )
- Salt and pepper to taste
- Mix well, serve with, toast, crackers, dip chips and veggies, or mix with mashed potato's.
