Make the Most of Your Leftovers

Do you ever wonder what to do with last night's (and four nights before then) dinner?

Do you ever find yourself with a fridge full of last week's dinners and neither you or your kids really want microwaved leftovers? There are plenty of things you can do with all the things you've left lying around. We'll start with my favorite: leftover quesadillas.

These are tasty and absolutely perfect to make when you have leftover tacos in the fridge. Simply warm a tortilla in a skillet with olive oil for a few minutes, and fill with leftovers such as tomato chunks, shreds of lettuce, onion, cheese, salsa, sour cream, steak cut into strips (from another night, of course), cubed chicken, or whatever other vegetables/meat combos you like. They're ready in less than 10 minutes and are perfect for single meals, college I-need-to-study dinners, and teenagers.

Another thing that is pretty much just the same but slightly fancier is a taco salad in a tortilla bowl. It's slightly more complicated, but well worth it. Take a tortilla and spray it with cooking spray (or even brush it with olive oil, if you prefer the taste) then put it over a glass, oven-safe cup, being sure it's wrapped nicely. Put it in the oven at 400 degrees for 8-10 minutes. Once it's out, it should form a nice bowl. Fill with leftover taco supplies and anything else you like. Great for entertaining, as many can be made. An easy first-meal for the younger kids who are ready for the oven.

Leftover hamburgers are very easy to work with. Cut them up and add them to shells and cheese for a quick fix, or pour gravy over a re-heated patty (minus the cheese) for an impromptu Salisbury steak. Goes perfect with leftover mashed potatoes or scalloped potatoes!

You can even "create" your own leftovers to use for breakfast when time is short. Fry bacon, bake biscuits, and make some miniature omelets (just like you would a fried egg, but stir up the egg first) then the next day heat them up and make a McDonald's-like concoction! Or even re-heat leftover spaghetti for breakfast, the carbs will energize and awaken you quickly (so you can pass on the early-morning energy drink).

You'd be amazed at the meals that could be made from what you're probably going to throw away in three weeks. Go take a glance in the fridge to see what you've been missing! And don't say no one told you J!
