Knowing a few tips and tricks is all it takes to raise the level of your cooking in the kitchen. When it comes to decorating a cake or just icing a cake, keeping the plate it is being served on clean from icing makes for a nicer presentation. Since we eat with our eyes first, presenting a more professional visual will surely add to your efforts.
After plating the first layer of the cake, take small pieces of wax paper and place them under the cake. You want small pieces so they are more easy to remove once the cake is finished.
Now ice or fill your layers as usual, adding layer or layers as desired.
To ice the exterior of the cake, pile the icing onto the top of the cake and then moving it down the sides of the cake. Continue to move the icing to the sides and smooth the sides and top as you desire. Once satisfied, remove the pieces of wax paper from the bottom of the cake to expose the clean plate surface. If you desire to decorate a border around the cake do so after you remove the wax paper because moving the wax paper after decorating the bottom edge might alter the delicate decoration.
