Although several varieties of cinnamon producing trees are grown, the processing method is similar for all. At harvest, the dried bark is slit and stripped off both the trunk and branches. It is then rolled into long, slender quills, known as cinnamon sticks. These quills sometimes are as long as 30 inches.
The aroma and flavor of cinnamon are retained much longer in stick form than in ground form. Thus, since ground cinnamon weakens with storage, don’t buy it in great quantities, buy small amounts of fresh cinnamon periodically. Cinnamon is best stored in a cool, dry place. Excessive heat may weaken the flavor and high humidity cause caking.
One of the most popular spices, cinnamon is often used in breads, salads, desserts, beverages, and some meat dishes. Ground cinnamon emits flavor more readily than stick cinnamon since grinding cuts through the cell walls, exposing the flavor bearing oils. Stick cinnamon is most often used for spicing clear liquids that might be clouded by ground cinnamon. Cinnamon sticks also serve as handy, flavorful stirrers for hot beverages.
