Fancy Ways with Butter

Serve your guests with delicious butter served with a fancy and delicious twist.

Whipped Butter - So creamy and light, this butter makes an elegant topper for pancakes or steaks.

Let ¼ pound butter stand at room temperature for 1 hour. Place in mixing bowl and run electric mixer at lowest speed until large chunks smooth out. Gradually increase mixer speed to fastest position, and whip until butter is fluffy. Cover until ready to use. If it is made ahead and chilled, remove from refrigerator an hour before using. Makes about ¾ cup.

Variations

Mustard Butter: Blend ¼ cup prepared mustard into Whipped Butter. A grand spread for ham or cheese sandwiches

Herb Butter: Blend 1 tablespoon minced parsley, 1 teaspoon lemon juice, ½ teaspoon savory, and ¼ teaspoon salt into Whipped Butter. Delicious on potatoes

Blue Cheese Butter: Beat ¼ to ½ cup crumbles blue cheese into Whipped Butter. A gourmet touch for hamburger steak

Garlic Butter: Blend 1 clove garlic, minced, into whipped butter. Zesty bonus for French bread or roast beef

Horseradish Butter - A dollop of this adds zest to baked potatoes, corned beef, roast beef or veal.

Cream 1 cup softened butter until light and fluffy. Blend in ¼ cup horseradish and 2 tablespoons finely chopped parsley. Makes about 1 ¼ cups.

Lobster or Crab Butter - You will like this for canapés, topped with a dab of mayonnaise.

Cream ½ cup butter until light. Add ½ cup cooked or canned lobster or crab meat, mashed to a fine paste, and a dash of bottled hot pepper sauce. Beat until well blended. Makes about ¾ cup.

Golden Butter - Nice on toasted rounds of salty rye bread or crisp crackers.

Cream 1 cup butter until light and fluffy. Blend in 4 hard cooked egg yolks, mashed, 1 teaspoon prepared mustard, and dash pepper. Makes about 1 ½ cups.

Ham and Egg Butter - A flavorful sandwich or canapé spread in itself.

Cream 1 cup butter until light and fluffy. Blend in ½ cup finely ground cooked ham, 2 hard cooked egg yolks, mashed, 1 teaspoon prepared mustard, and dash pepper. Makes about 1 ½ cups spread.

Bacon Butter - Try this combination on hot vegetables. It perks up the flavor. Good on cheese or tomato sandwiches also.

Cream ½ cup butter until light and fluffy. Blend in ¾ teaspoon prepared mustard, and 4 slices crisp bacon, crumbled. Makes about ½ cup spread.
