Corn is King

Corn is such an underestimated vegetable. Yet,when prepared correctly,it stands alone.

The best way to enjoy corn on the cob

You should never boil corn on the cob. The flavor goes down the drain when you discard the water. The way to extract the flavor of the corn is by roasting it. Roasting the corn in its husk in the oven or on a barbecue grille is the way to go. Once the husk turns brown the corn is done and ready to eat. The roasted corn is easily enjoyed with or without butter.

The lost art of popping corn

People don’t pop corn as often as they use to. The easy convenience of the microwave has made people lazy when it comes to popping corn. Throwing a flat bag into a radioactive box for about 4 minutes is no fun at all. For $.99, you can prepare your own popcorn without having to pay for the fancy packaging. Also, your popcorn can be extra special just by sprinkling on flavors such as sugar, cheese, or garlic butter. Not all at the same time mind you. Note: olive oil is not a good cooking oil to pop corn in. Make some popcorn for your friends and fill individual sandwich bags for your family and friends to enjoy.

Fried corn is a southern comfort

My brother loves to prepare fried corn. He gets me to scrape the kernels off the cob. I use a knife. Then my brother fries bacon (preferably slab bacon) to use the grease to fry the corn in. Whole milk is added to the corn and bacon grease mix during the frying process. Pepper is added to taste. The end result is some sweet tasting southern fried corn. You must use fresh corn on the cob. Canned corn will not yield the best results in this recipe. Unfortunately, I don’t eat the fried corn because I’m a vegetarian. However, I remember how good it tasted when I was a meat eater. I don’t mind helping to prepare it so others can enjoy.

Corn can be enjoyed in so many different ways that I could go on and on. I just thought that I’d share with you some ways to prepare this tasty veggie. In my opinion corn rivals the sweet potato as a versatile food. Enjoy!

Hey there vegetarian, I enjoyed your emphasis on corn. If you could, try my remix recipe of canned cream corn and canned whole kernel corn with your favorite vegetable oil seasoned to taste. This remix recipe is hidden (almost) in my article "Kitchen and Household Tips at Harvest Time".

Thanks!
