First of all you need to gather your basic ingredients. You can buy crickets in bait shops, pet shops, or catch your own. Catching them yourself can be very hard work and could take a few days and you will need to make sure that you are collecting the right kind of edible cricket in an area that is pesticide free.
Take your crickets and wash them thoroughly. This isn't easy as they tend to hop around all over the place. Using a mesh splatter guard over a bowl helps to prevent this. Shake them well to remove as much water as possible, then put into a plastic box and place in the freezer for about twenty minutes. This kills the crickets which is an important part of the preparation unless you want to chase them around your plate with a fork.

After you take them from the freezer rub each one between your hands to remove the legs and antennae. These come off very easily. You can also easily remove the heads and tough wing cases if you wish.

Bake your crickets on a cookie sheet at medium heat for around twenty minutes, or until crisp. Don't let them burn. Remove from the oven and allow to cool.
Take some chocolate chips, or a few squares of chocolate and melt in a microwave. Dip your baked crickets one by one into the chocolate and leave to cool on waxed paper.

I have never tasted one of these so I can't comment on the flavour. The truth is that I have been offered one of the ready made variety, but I couldn't bring myself to even put it in my mouth.
